For Easter I made these coconut cupcakes with candy toppers – they were super easy cause I cheated 🙂
Yep I used a mix, but it was gourmet and did NOT taste like it was out of a box! Here are the ingredients needed… and I’ll clue you in on making the toppers.
The mixing did actually take several steps but somehow I managed to keep them straight…
and just like that the batter was ready to put in the cupcake wrappers and bake!
While they were baking the kids helped me make the candy toppers following a tutorial on Lisa Leonard’s blog. You just heat the starburst for approx 10 seconds in the micro, smash them flat and then use little cookie cutters to cut out cute little shapes. (I found mine at Micheals)
After the cupcakes were baked and cooled, they were iced with a cream cheese icing, sprinkled with coconut and topped with the candy cut outs. I decided to cover my cake stand with M&M’s and put the cupcakes on top. That’s the one thing I came up with myself and if I do say so myself it looked pretty cute!
My boys REALLY liked the cupcakes! Can you tell? We didn’t have many leftovers…
I put the extra cutout starbursts around our “bunny bread” (which I also didn’t make – we did it low key this Easter so we would have lots of time for the fun and important things) BRILLIANT 🙂 That’s it – actual recipes are soon to come in this section, but hope you enjoyed this little story!
